The chicken should be slightly spicy. Stir in peppers and onions and serve with a choice of toppings, including guacamole, yogurt, and cheese. They’re super simple to put together because the chicken and veggies all go in one pan in the oven to cook. While baking, you can make a simple and healthy guacamole topping. Please put it on the table with freshly warmed tortillas, and dinner is served!

Ingredients :

  • ½ red bell pepper
  • ½ green pepper
  • One medium red onion
  • Two skinless chicken breasts
  • One teaspoon of smoked paprika
  • One small pinch of ground cumin
  • Two limes
  • Two tablespoons olive oil
  • fresh cilantro to garnish

Guacamole:

  • Four cherry tomatoes
  • One ripe avocado
  • Juice of 2 limes

When serving:

Four small flour tortillas
180 ml plain yogurt
75 grams of grated cheddar cheese

Preparation and cooking:

  • Preheat the oven to 180°C.
  • Cut the green pepper and the red pepper in half. Seed them both. Cut half the bell pepper into long, thin strips.
  • Hull the onion and, remove the outer skin, cut it into thin slices.
  • Cut the chicken into strips.
  • Put the chicken, peppers, and red onion in a bowl with two tablespoons of olive oil, paprika, and cumin.
  • Squeeze the juice of half a lime over everything, season with salt and pepper, and mix well.
  • Please put it in the refrigerator to marinate for 20 minutes or more. If you’re short on time, skip to the next step.
  • Oil a baking sheet. Using tongs, place the pepper, onion, and chicken strips on the baking sheet. Make sure each piece has its own space and bake for 20-25 minutes or until golden brown and cooked. Flip the slices once halfway through cooking.
  • Meanwhile, in a blender, combine the cherry tomatoes, avocado, and lime juice to make the guacamole.

Ingredients :

  • Four cans of condensed cream of celery soup, undiluted
  • Same with condensed cream of chicken, undiluted
  • 1 kg of American processed cheese (Velveeta), cut into cubes
  • 4 cups sour cream
  • 1 1/3 cup butter
  • Four teaspoons of  seasoned salt
  • Two teaspoons of  garlic powder
  • the same amount of pepper
  • 10 kg potatoes, peeled, cubed, and cooked
  • 2 cups crushed crackers

Preparation and cooking:

Combine soups, cheese, sour cream, 1 cup butter, seasoned salt, garlic powder, and pepper in four ovens. Cook and stir until cheese is melted and mixture is smooth. Add potatoes; mix well. Transfer to four dishes.

Cook uncovered at 175°C for 45 to 60 minutes or until bubbly. Melt remaining butter; mix with cracker crumbs. Sprinkle over the potatoes. Bake for 10 to 15 minutes or until the topping is lightly browned. Let stand 5 minutes before serving.
